Ingredients:
- 2 eggplants (halved)
- 1 onion (sliced)
- 2 tomatoes (chopped)
- 2 garlic cloves (minced)
- ¼ cup Extra Virgin Olive Oil
- Salt & pepper to taste
- Fresh parsley for garnish
Instructions:
- Sauté onions, garlic, and tomatoes in olive oil.
- Stuff eggplants with the mixture and bake at 180°C for 40 minutes.
- Drizzle with olive oil and garnish with parsley.
