Imam Bayildi (Turkish Stuffed Eggplant)

Ingredients:

  • 2 eggplants (halved)
  • 1 onion (sliced)
  • 2 tomatoes (chopped)
  • 2 garlic cloves (minced)
  • ¼ cup Extra Virgin Olive Oil
  • Salt & pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Sauté onions, garlic, and tomatoes in olive oil.
  2. Stuff eggplants with the mixture and bake at 180°C for 40 minutes.
  3. Drizzle with olive oil and garnish with parsley.
